I recently ordered a Betty Crocker cookbook, and we have been trying out a lot of new recipes from the book.
Tonight we had Impossibly Easy Chicken and Broccoli Pie.
I have to say that while this was very yummy, I would have liked for it to have a little more flavor.
I think we will definitely make this again, however I may add to it the next time around. Typically I never make a recipe exactly as the recipe is written, and this one time that I did I wished I had changed it a bit. (Of course!)
Impossibly Easy Chicken and Broccoli Pie (although we made a casserole)
Prep Time: 20 minutes (Start to Finish: 1 hour 5 minutes)
6 Servings
Ingredients:
1 bag (10 oz) frozen chopoped broccoli, thawed, drained
1 1/2 cups shredded Cheddar cheese (6 oz.)
1 cup cut-up cooked chicken
1 medium onion, chopped (1/2 cup)
1/2 cup Original Bisquick mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
Directions:
1.) Heat oven to 400 degrees F. Grease 9-inch glass pie plate. In pie plate, sprinkle broccoli, 1 cup of te cheese, the chicken and onion.
2.) In medium bowl, stir remaining ingredients until blended. Pour into pie plate.
3.) Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup of cheese. Bake 1 to 2 minutes or until cheese is melted. Let stand 5 minutes before serving.

(For those of you dieting I thought I would include the calories and so forth. I would think you could eliminate the salt and use fat free or low fat cheese as well to cut back a bit. You could even use a low fat or non-fat milk when mixing the Bisquick. These are just my suggestions though.)

Yesterday the boys and I made some yummy smoothies.
We actually cheated and purchased Yoplait Smoothie mixes.
Have you seen them? They are in the freezer section. You simply add milk or juice and mix! How easy! We topped some of them with cool whip also! Yum!
