March is National Nutrition Month and the key theme for 2013 is “Eat Right, Your Way, Every Day.” Since mushrooms are a versatile food that can be incorporated in one’s meal plan from breakfast to dinner, they are a natural fit for discussion this month. (Please note that throughout this post we are referring to cultivated mushrooms).
Adding mushrooms to your meals can really spice things up and add a little flavor. Did you know that mushrooms are always in season? They sure are! They also have natural antioxidants and essential vitamins and minerals. Thin of them as a natural hidden treasure of healthy goodness that can sneak into your family’s meals without anyone ever knowing they are eating healthy! This superfood is a key ingredient to enhance flavor, extend portion sizes and bring an extra serving of vegetables to the plate for breakfast, lunch, appetizers and dinner. But, adding mushrooms to your meals aren’t going to break the bank because they are super inexpensive.
Make your suppers slimmer by adding mushrooms to your meat dishes like pasta sauce, burgers, tacos and meatloaf. This is a creative way to make a healthier version of your classic favorites. Mushrooms have such a hearty texture that they can be finely diced and used in place of meat in some of your favorite dishes. Breakfasts can include mushrooms as well. Why not start your day off with a dose of vitamin D? Mushrooms are the only source in the produce aisle that supply vitamin D. (I know, I had no idea either!)
Sautéed mushrooms are an easy way to add flavor and nutrients including vitamin B and potassium. You can sauté the mushrooms with other favorite veggies as well!
