I didn’t really talk about our Christmas a whole lot. The boys were really pleased with all of their presents. We actually missed a few of our get togethers because Mommy wasn’t feeling well. I felt really bad about it, but what is a Mother to do? I have actually been feeling quite a bit better this past week. Of course, now I have a cold or something going on and I can’t breathe real well when I’m up and doing stuff, and I can’t really smell a whole lot (which isn’t always a bad thing when pregnant!) I shouldn’t say that I’m feeling well though, because it seems the minute I do I always start to feel bad again.
Here is a pic of our tree just before the kids ripped everything open! I can only imagine what it is going to look like with presents for 5 next year!
Our week has been a bit crazy so far. So far the only one with the chicken pox is our 6 year old. He will be going back to school next week. I’m thinking the others still might get them though. I hate waiting and not knowing though! The school called me to get some more info on the chicken pox (when they started, how bad they are and so forth.) I guess they have to report it to the health dept. Well, when they called they said something about my 6 year old having had 2 vaccinations for the pox. I completely forgot that when he got his Kindergarten shots he got the second vaccination. He is my only child that has received 2 vaccinations, and so far he is the only one that has gotten the pox. I’m actually sort of hoping the others just get them now so we can get them over with, you know? I was told by the school that it is mandatory that they must have 2 chicken pox vaccinations before starting Kindergarten now.
It’s freezing cold here today so I decided to make a nice Ham and potato soup and some sweet cornbread for supper. I have never made this Ham and potato soup recipe before, but found it online and thought I would give it a try. Of course, I’m never good at following rules and didn’t exactly follow the recipe, (I like to change things up a bit.) But, I’ll leave the recipe for you in case you might like to try.
Ham and Potato Soup
3 1/2 cups peeled and diced potatoes
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3/4 cup water
2 tablespoons chicken bouillon granules
1/2 teaspoon salt
1 teaspoon pepper
5 tablespoons butter
5 tablespoons All Purpose Flour
2 cups milk
1.)Combine potatoes,celery,onion,ham and water in a stockpot. Bring to a boil and then cook over medium heat until potatoes are tender, about 10-15 minutes. Stir in bouillon,salt and pepper.
2.)In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form, until all milk is added.Continue stirring over medium-low heat until thick (4-5 minutes.)
3.)Stir the milk mixture into stockpot and cook until heated through.
