If you are a Mom then I am sure you completely understand my title, and I don’t need to say anymore, however for those of you that need an explanation I will go there…
My day started off okay. I slept in a bit since my hubby was back from his recent business trip and was able to put the boys on the bus. Sleep, oh how I love that! So, you would think since I actually got a little bit of sleep I might have a better day, right? You would think, but things just didn’t seem to fall into place today. By about mid-day I was exhausted, and when the boys laid on the couch for a nap I joined them. Even more sleep…Wow! So now you would think that I was really having a good day, right?
Not exactly.
I prepared supper tonight early. I had everything ready and the potatoes boiling on the stove top. I went to the other room for a second when one of the boys called for me and when I walked back into the kitchen the CAT was on the counter EATING OUR SUPPER! To say that I was upset would be an understatement. So, I had to dump that part of the meal and start over! No fair, no fun!
Just for fun I thought I would share tonight’s dinner recipe with you all.
I normally don’t write things down, but I did make this twice, so I’m pretty sure I can give you an accurate estimation of what I added.
This is our version (for tonight-I never make anything the same twice) of Sheppard’s Pie
1 lb Hamburger
Small Onion
Shredded Carrots
(I added bell peppers to the first batch, but didn’t have any left to add to the second batch. I’m sure it would have been yummy with them though!)

1/2 Jar of Black Bean and Corn Salsa
3-4 Tbsp Country Bob’s Sauce (We love this stuff!)
Brown Hamburger and add the other ingredients.
Make mashed potatoes (we added garlic powder and cheese to ours)
Heat oven to 350 degrees.
Put Hamburger mixture in the bottom of a casserole dish.
Put mashed potatoes on top of the hamburger mixture.
Place in oven and cook for about 15 minutes (depending on your oven.)

The second half of our day ended up being a lot better.
The older 3 boys and I went for a walk (the boys rode bikes)
It was great to get out and get some fresh air.
When we got home the neighbors invited the boys over to play for a bit.
I made smoothies for the boys and had them ready when they came in the door from playing with their friends. If anyone has any great smoothie recipes we would love to hear them.
We make smoothies just about every day.
