As you all know, I have been on a mission to make my family healthier. I have been dieting and exercising myself and have lost 19 pounds since the end of November (the 29th to be exact.) I weigh in with my cousin and sister every Monday and am always nervous to step on the scale, however I have been doing pretty well so far.
I don’t only want to make myself healthier, but I want to make my family healthier as well, so I have been dabbling with some new recipes and so far they have all been a HUGE success! Ok, except the time I made turkey burgers, my family did not like them at all, but that’s ok, they don’t have to eat and like everything I make, right?
Tonight I wanted to make a garlic penne pasta, so I went to my favorite low fat recipe site (skinnytaste.com) and I tweaked one of the recipes I found there and made it our own. If you know me, you know that I can never just make something per the instructions. I ALWAYS have to change things and make it my own, which usually turns out quite well. ๐
Garlic Penne Pasta with Broccoli and Tomatoes
INGREIENTS:
-High Fiber Penne Pasta (1 box) -I’m cooking for a large family, you can change this for your family.
-1 bag Frozen Broccoli
-You can use canned diced tomatoes or cut 1-2 tomatoes. We had canned diced tomatoes on hand, so we used a half of a 28oz can
-Minced Garlic (I didn’t measure, but I would say we used about 1 tsp or so. You can add more or less depending on what you like
-2 Tbsp Extra Virgin Olive Oil or we used 2 Tbsp of Wildtree Roasted Garlic Grapeseed Oil (this is so yummy!)
-Pepper (add to your liking)
-1/4 cup of grated Parmesan Romano
-Mrs. Dash (Salt Free) Tomato Basil Garlic Blend
(Optional: 4 Tbsp Fat Free Italian Dressing)
Preheat the oven to 450. In a baking dish combine oil, garlic and broccoli (Since our broccoli was frozen we boiled it on the stove for a bit just enough to soften it.) Toss this all together and put in oven for about 20 minutes, tossing halfway in between.
Boil water, add pasta and cook according to directions.
Drain pasta and toss with broccoli. Add tomatoes, pepper, Mrs. Dash Tomato Basil Garlic Seasoning Blend (just sprinkle over top and then toss.)(I also added 4tbsp Fat Free Italian Dressing,however if you add extra garlic you can skip this step. It all depends on your taste preference.)
Next, add Parmesan Romano (sprinkle on top)

We had a horrible sickness in our house that started on New Years day and made its way through our house all week. It finally hit me Wed. night and kept me off of my feet for a day and a half, however today I woke up feeling great and was able to get the house back in order. (A day and a half of Mom being down and kids running the house is never good! My house looked like a tornado hit it!) It feels good to be healthy again and back on the right track.
