It’s a new year and with the new year comes new goals. One of our big goals this year is to eat healthier.
My boys absolutely love strawberries, and they also love cupcakes, so I wanted to combine their loves and make something they would be able to eat and enjoy just in time for Valentine’s Day!
These Whole Wheat Strawberry Muffins are perfect for Valentine’s Day!
If you would rather not have whole wheat simply change out the whole wheat flour for white flour. This recipe is so simple and so yummy!
I might add that my children really enjoy topping with cool whip as well. We like to use Fat Free Reddi Whip.
Whole Wheat Strawberry Muffins
Ingredients:
1 1/2 cups Whole Wheat Flour
1/2 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
1/3 cup Honey
1/4 cup Oil
1 tsp. vanilla
1/3 cup Unsweetened Almond Milk (or your choice of milk)
1 large Egg
2 cups Diced Strawberries
Instructions:
1.) Sift the dry ingredients together in a mixing bowl. (Flour, Baking Soda, Baking Powder, Salt)
2.) Beat the eggs, milk, vanilla, oil and honey together in a separate bowl.
3.) Mix the dry ingredients with the wet ingredients.
4.) Mix in the berries—a little at a time.
5.) Fill muffin cups about 2/3 full.
6.) Bake for 30-35 minutes at 350°

This looks Delish and not too hard either next time i make muffins I think I am going to add some sour cream and see what happens cause I bought too much and need to use it up before it expires LOL
